Basil and Rhubarb Cocktail

As the weather is getting warmer we all like to sit out in the garden so finding the perfect summer drink is an essential. Follow these simple steps to make a delicious rhubarb and basil cocktail, for adults only.

Ingredients to make 1 drink:

3 medium to large basil leaves, rolled and cut into thin strips

1 1/2 ounces vodka

Ice

Club soda

3 tablespoons rhubarb purée (recipe follows)

12 to 13 stalks of rhubarb

3/4 cup sugar

1/4 cup water

  1. To make the rhubarb purée chop the rhubarb stalks into small pieces. Put into a medium sized saucepan with the sugar and water to cook stirring occasionally for 10 minutes, until the rhubarb is soft. Transfer mixture into a blender and blend until smooth. Strain over a bowl pressing to get as much of the rhubarb pulp out as possible. Discard the pulp left overs.
  2. Using the back of a spoon lightly press on the basil at the bottom of your glass.
  3. Add the rhubarb purée and stir. Add vodka and ice cubes and top with club soda. Garnish with a basil leaf.
  4. Sit back, relax and enjoy.
